P125 Coeur De Guanaja is a specially developed chocolate couverture that has a higher than normal cocoa solid content, and lower cocoa butter content.
The resulting chocolate is a chocolate that can add a real impact to chocolates, ice cream and pastries that are looking for an increase in flavour and no detriment to texture.
Many chocolate recipes can actually lack in a real chocolate flavour which would mean that pastry chefs would revert back to adding cocoa powder to achieve the strong chocolate flavour they desired. This however had it's own draw backs, as it can sometimes result in a grainy texture and a loss of colour. Coeur De Guanaja solves this problem, by allowing pastry chefs to use a chocolate that has a lower cocoa butter (fat) content and higher cocoa solid content - meaning more taste, and no adverse effect on the texture.
