Dulcey is a completely new type of chocolate from French chocolate maker Valrhona. It is has been hailed as a new type of chocolate from it's manufacturer, blond chocolate!
It is best described as being similar to a white chocolate, however in the manufacturing process butter is caramelised to give a distinctive caramel, biscuit tone.
We think it works extremely well in salt and coffee based recipes, which cut through the sweetness perfectly.
