Fraise is a Strawberry couverture which was recently launched by Valrhona as part of their 'Inspiration Range' of fruit and nut couvertures. It encapsulates the intense contrast of sharpness and sweetness within fruit, whilst maintaining the texture of Chocolate. Works beautifully with Valrhona Opalys White Chocolate.
Made by combining dried strawberry powder, with cocoa butter and sugar resulting in an intense and sharp strawberry flavour.
