1. HOW LONG HAVE YOU BEEN A CHOCOLATIER?
I joined the company in September after being a chef for 10 years! I have thoroughly enjoyed my first 6 months with The Chocolate Society learning a brilliant new skill
2. WHAT'S YOUR FAVOURITE PRODUCT TO MAKE?
My favorite products to make are the molded dome bon-bons because I enjoy the process of spraying the shells to create a product which is not only delicious, but stunning to look at. Where we hand polish the molds before we spray them, it enables to finish to be exceptionally shiny. I am also enjoying spraying the different Easter Egg molds and learning a wide range of techniques to create finishes which I hadn’t even realised were possible.
3. WHAT'S THE BEST THING ABOUT BEING A CHOCOLATIER AT THE CHOCOLATE SOCIETY?
When I was a chef, I always had a particular interest in dessert and sweets, so this job is perfect for me. I love that we are always encouraged to create new ideas and flavours, with the Box of the month being a perfect example of constant innovation which comes from the whole team each month. Being able to translate my love of dessert making and flavour combinations into my own box this March has been a treat. Also my girlfriend love me a lot more now I work at a chocolate company!
4. WHICH OF THE CHOCOLATE SOCIET'Y PRODUCTS IS YOUR GUILTY PLEASURE?
It’s a no-brainer, the Caramelised Milk Bar! It’s delicious and great to nibble on sat in front of the TV after a long day
5. WHAT WOULD YOU DREAM CHOCOLATE COMBINATION BE THAT YOU HAVEN'T MADE YET?
I’d love to work on a combination of dark chocolate with either a dark ale or a cider, I believe the two would compliment each other perfectly and would create something really different.
