Al Attends A Chocolate Masterclass At The Valrhona Chocolate School in France
Al Garnsworthy our head chocolatier, was recently invited to attend a chocolate masterclass in France held by revered chocolatier Phillip Givre and supported by Valrhona UK & Northern Europe chocolatier Andrew Gravett.
The class was held over three days in September, and was open to a select few chocolatiers and pastry chefs from the UK. On the course were pastry chefs from the likes of Le Manoir aux Quat'Saisons, The Savoy and the Langham Hotel in London - Al was in the company of some of the best chefs in the country.
Over the three days numerous recipes were dissected, discussed and made, meaning that by the end of day three there were quite a few bon bons, truffles and caramels to bring back for the rest of the team to try.
It was an incredible opportunity for Al, and the information and techniques that were discussed and learnt on the course have meant that Al has now come back to the UK and redeveloped all of our fresh chocolate truffles, which now have a greater depth of flavour and an even smoother ganache.
The final afternoon of the trip was spent having a tour of the actual Valrhona factory, which was incredible, but unfortunately no photos are allowed to be taken inside, and as such there are no photos for that section of the trip.
