We have been making liquid salt caramels for a number of our corporate chocolate customers over the past year. During this period we have been able to work on the recipe and perfect it in time to launch it as one of our star Christmas Chocolates for 2012.
Our chocolatier Al makes small batches of caramel using only the finest quality ingredients. He experimented with a number of different types of salts, such as Fleur De Sel, Cornish Sea Salt, Malden Sea Salt and more, before finding the Anglesey Sea Salt company; Halen Môn.
The distinct flavour of the Halen Môn sea salt has resulted in some of the Worlds top restaurants using it, such as Heston Blumenthal's Fat Duck and Ferran Adria's El Bulli. Al feels that Halen Môn sea salt compliments the slight edge to the caramel and works perfectly with the dark Valrhona chocolate.
Once made, the salt caramel is then hand piped into small dark chocolate shells, and then covered in an extra layer of delicious dark 70% Valrhona chocolate.
The final touch for each caramel is a small sprinkling of edible gold glitter, which gives each caramel an eye catching sparkle.
