Cassis dark chocolate truffle containing crystallized mint leaves
Butternut squash white chocolate mousse with a hint of sage, in milk chocolate
Strawberry caramel with a hint of nasturtium in milk chocolate
Candied agave liquid puree, papaya truffle, dark chocolate
Tobacco dark chocolate truffle
Olive oil, salted caramel, high cocoa content milk chocolate (dark milk)

Hi,

I have a suggestion: apricot with lavender-infused dark chocolate. Perhaps an apricot mousse or ganache with a fruitier apricot centre, and the whole thing covered in dark chocolate that has a hint of lavender.

I have a few flavour suggestions I’d love to see made by your expert chocolatiers!

1. Spanish churros – cinnamon and churros dough in a high cocoa milk ganache with dark chocolate shell
2. Sherry trifle – a layer of white vanilla ganache, a layer of sherry chocolate ganache and a strawberry pate de fruit in dark chocolate shell
3. Grown up oranges & lemons – tangerine and yuzu ganache with champagne or blood orange and pomelo with champagne
4. Extra nutty – a layer of macadamia, a layer of cobnut and a layer of walnut
5. Pandan, coconut and sour cherry
6. Pandan, star anise and mango
7. Tea time – Lapsang Souchong ganache or caramel
8. Banana Flambee – burnt butter caramel, banana and spiced rum
9. Lemon verbena and rhubarb
10. Pear pate de fruits and cider ganache dark chocolate
11. Plum Scnapps caramel with cinnamon almond praline
12. Spiced fig “jam” (cinnamon, clove and ginger) and hazelnut orange praline

Kind regards,

Sarah
